Pit Beans

Ingredients

  • 1 diced brown onion
  • 2 tsp crushed garlic
  • 1 tsp cumin powder
  • 1 tsp sweet paprika
  • 1 diced green capsicum
  • 2 Tbs Dijon mustard
  • 1 can crushed tomatoes
  • 1 jar pasta sauce
  • 1 cup beef stock
  • 1/2 cup apple cider vinegar
  • 2 Tbs brown sugar
  • 3 cans cannellini beans (drained)
  • 3 Tbs Worcestershire sauce
  • 500g BBQ leftovers (chopped brisket, pulled pork, diced beef ribs, chicken, etc)
  • Sour cream, to serve
  • Salt n pepper to taste

 

 Method

  1. Light smoker and heat to 250°F/120°C.

  2. Combine all ingredients into a cast-iron pot or bbq friendly pot

  3. Cook uncovered for around 1.5 hours, stirring regularly.

  4. Place a lid on the pot and continue to cook for around another hour. Stir regularly.

    TIP: If at any point it looks like it's reducing too much and becoming too thick, just add more stock.
  5. Finish off with a nice big dollop of sour cream.
