
Four Monkeys Pork Spare Ribs

Ingredients
- 1 rack SunPork Pork Spare Ribs, squared, fat trimmed & membrane removed
- Four Monkeys Pork BBQ Rub
- 2 cups brown sugar
- 1 cup honey
- 2 cups butter
- 1 cup BBQ sauce
Method
- Fire up pit (or oven) to 275°F/135°C for indirect heat.
- Generously rub underside of ribs with the Four Monkeys Rub. Leave to sit for 2 mins to allow rub to attach to meat.
- Flip and repeat. Marinate for 30 mins or until ribs look wet.
- Place rib meat side up in smoker. Cook for 1 hr 30 mins or until the rub is set.
“TIP: To test if the rub is set, scratch the top of the ribs. If the rub doesn’t come off, it is set and ready to take out.
- On a large piece of foil, layer half the brown sugar, honey, then butter. Place ribs meat side down on top, then layer with remaining honey, butter and brown sugar.
- Wrap in more foil and smoke for 1 hr or until tender.
“TIP: To test if the ribs are ready, insert a toothpick in between the bones. The meat should feel as soft as butter.
- Flip over the ribs in the foil (meat side facing up). Brush on your favourite BBQ sauce and cook for a further 10 mins.
- These bad boys are ready!
